The Japanese Miyabi 7000 D knives invite you to explore the traditional Asian art of knifemaking. Beauty and sharpness unite each kitchen knife in the Miyabi 7000 D series, including the Shotoh knife, with a blade length of 13 cm,which is ideal for processing smaller pieces of food, or for slicing and dicing fruits and vegetables.

Shotoh means "little knife" in Japanese and is known as a "petty knife" in English, which comes from the French word "petit", meaning small.In Japan, this knife is considered one of the traditional knives and is one of the best-selling blade shapes, after the Santoku knife.

The symmetrical blade is sharpened using the traditional Honbazuke hand technique. This is a three-stage grinding, sharpening and polishing process along the entire length of the blade, which ensures an extremely sharp katana-type blade.

The core of these knives is made of fine carbide steel. This core is wrapped with 65 layers of steel to create a unique Damascene design. Special Japanese CMV60 steel enriched with cobalt, molybdenum and vanadium for increased blade hardness and durability. The high carbon content gives the knife extreme hardness - approximately 61 Rockwell degrees, for unsurpassed and long-lasting sharpness.

Theergonomic handle made of durable and tough micarta - a layered resin and flax fiber blend - is low maintenance. The combination of wood-textured micarta and polished stainless steel elements is truly unique. The handle features a unique Miyabi logo on the metal base.
